The Glutamate AssociationThe Glutamate Association is an association of manufacturers, distributors, and users of glutamic acid and its salts, principally the flavor enhancer monosodium glutamate (MSG), for the manufacture and preparation of a wide range of recipes, dishes, and foods.

Among the Association’s members are many of the largest companies involved in manufacturing and marketing food ingredients, spice and flavor blends, and prepared foods and beverages for the retail, hospitality and catered sectors.

The Glutamate Association provides factual, science-based information about glutamate, monosodium glutamate and umami, including their role and benefits in food. The Association works closely with leading scientists in the fields of taste perception and nutrition, and with some of the world’s most innovative chefs as well as registered dietitians, to foster greater understanding of the unique umami taste, and MSG as its source in tasty, healthy cuisine.
